I’m a big fan of eggs for breakfast. There are so many different ways they can be eaten and prepared, and they’re quite healthy for you, especially compared to the cereal and other really sweet breakfasts pushed for kids.

This recipe is one of the simplest in terms of ingredients, but takes a little bit more time than a few of the other recipes we make for breakfast. You can really go all out and add all kinds of delicious items as well inside, but we keep it simple most days when we make it.

As such, this is one of the simplest recipes for breakfast in terms of number of ingredients. Eggs and milk are all that you need. You can add other items as well, and I’ll talk about that at the end.

Making the omelet

For a family of 4, I use 6 eggs, and about ¾ cup of milk. You can add or remove as you’d like and need. I also have a frying pan that is about 12 inches wide at the bottom, so if you have a smaller pan you’re using, you may have to cook more than one omelet.

  • Place the frying pan on the stove and turn to a medium high heat.
  • Crack eggs into a bowl.
  • Add milk.
  • Mix or whisk together until well combined.
  • I’d recommend that you spray your frying pan with oil so that your omelet doesn’t stick, but it’s not necessarily required.
  • Pour egg mixture into the pan.
  • Let cook for about 5 minutes. You’re basically looking for the eggs to be mostly cooked through.
  • Use spatula and fold the eggs on top of each other. It doesn’t have to look perfect (and probably won’t with such a huge omelet)
  • Let cook another minute or so. I will often cut the omelet up at this point and flip it over so it’s fully cooked.
  • Turn the stove off and enjoy.

Modifying the recipe

Now, you may think the above is a bit bland for your taste. That’s totally fine. Fortunately, this recipe is really simple to modify and make your own without a lot of work.

The simplest change is to add any number of spices to the mixture before cooking. Salt, pepper, cayenne pepper (maybe not so much for the kids), or whatever else you like. Throw in what you want before you mix the eggs and milk.

The next change will add a bit of work to your preparation, but is also quite tasty. Add in any number of vegetables that you cut or dice. For example, some green onions or red peppers are delicious in this recipe. I’d add these items in after your omelet has started cooking, but before you fold it in half.

Another tasty way to modify is with cheese. You can either add the cheese with the other vegetables above, or you can sprinkle it on the top of the omelet right at the end.

No matter how you make the above recipe, it’s quite healthy, and may quickly become a family favorite in your home.
