Healthy eating doesn’t have to be hard to accomplish. With a little planning, making a simple and tasty meal can be quite easy. Check out our other chicken recipes for more healthy meals for your family.

Chicken and vegetables in tortillas

Chicken is one of my favorite foods to eat. It can be used in a multitude of ways, and it’s a very healthy option for those that are trying to eat healthy. There are so many different ways to prepare chicken. This is just one of those options.

This meal is one of the more difficult recipes in our chicken recipe collection. It takes about 5 minutes of preparation, and about 15 minutes of cooking. You’ll need your focus for most of that time, although while things are cooking, you can be doing other things close by as well - just don’t forget about your chicken or you’ll be eating blackened chicken.

This recipe requires three ingredients: chicken, dry ranch dressing mix, and tortillas. Everything else is completely optional, and you can add other ingredients if you like. For the way that I prepare them, you’ll also need an onion, a fresh pepper, shredded cheese, and some salsa. I don’t give an exact amount of ingredients here since it really just depends on how many people are eating, and how much you want left over.

Cut your ingredients

Slice peppers

Start by cutting your onions and your peppers into strips. I like to cut my pepper first. Cut it in half, remove the seeds, and then slice it into thin strips (about ¼ of an inch wide). Slice your onion into round discs, and then cut the discs into quarters. You don’t need your onions diced, just small enough.

Next, take your chicken, and slice it into strips. I generally like my strips about ½ an inch wide, but just guess on it. It doesn’t have to be perfect or pretty, you just want them to be close to the same size so that they’ll all cook up nice and even.

Cook everything on the stovetop

Grab a frying pan and put a little bit of oil in the pan (I prefer olive oil, but whatever you’d like should be fine). Turn the stove on high, and put your onions into the oil. You can decide if you want to cook your peppers, or you’d prefer them raw. I generally don’t cook them, but some people prefer to cook them. If you decide to cook them, put them in the pan now as well.

Once the oil is simmering, and the onions are cooking put all of your chicken into the pan. Just get it spread out everywhere semi-evenly - you don’t want it all sitting in the middle or to one side. After your chicken is in the pan, grab your ranch dressing mix, and pour it in the pan across the top of the chicken. Don’t be afraid to add plenty of it as it gives the food a nice flavor.

Every 2 or 3 minutes, you’ll need to stir everything in the pan so that your chicken gets fully cooked through. At first, you’ll likely have a bit of water in the bottom of the pan, so it’s not as critical to be watching things as closely. The longer it cooks, that water will evaporate, and so as you get near the end, you’ll need to make sure you stir the mixture more often so it doesn’t burn and stick to your pan. Your food is ready when your chicken is a nice golden brown on the outside - you should be able to slice through a piece of chicken with your spatula really easily.

Preparing the wrap

Red peppers, cheese, and chicken on tortilla

Once everything is cooked, it’s time to eat. The wraps are really simple to make:

  • Tortilla goes on a plate.
  • 2-3 strips of chicken on the tortilla (more if you have large tortillas
  • A little cheese sprinkled on the chicken
  • Add other vegetables as desired (peppers if you didn’t cook them) - lettuce, tomatoes, etc.
  • Put a little salsa on top
  • Wrap it up and enjoy

That’s all there is to it. You can substitute out the tortilla if you want (it’s the most calorie filled item outside of the chicken) for lettuce, or some other alternative if you want. My kids don’t really like tortillas, so they usually just eat all of the other ingredients without it being a wrap.

Conclusion

Making a healthy meal doesn’t have to be difficult. Chicken wraps are delicious, healthy, and quite tasty for the whole family, and they are easy to modify for the tastes of your family.
